What's for dinner?

Everyone who knows me knows I'm obsessed with Rachel Ray. I used watch her cooking show all the time on the food network. I love to cook her dishes. In college I couldn't cook. I struggled adding the proper amount of water to easy mac. If it was something other than grilled cheese or scrambled eggs, I couldn't make it. I'm wondering where this cooking transformation took place...was it when we lived in Scranton? I don't really remember cooking so much there. Was it when we moved into the apartment? I'm not sure because the apartment had sucky counter space. Perhaps it was when I developed my interest in "grown up" entertaining.
Now, if you visit my house, you will find on my calendar, alongside of doctors appointments, social engagements and vacations, an assignment of what my family will be having for dinner that evening. I love to try new recipes...sometimes they suck (the thai chicken and sesame noodles from last week for example) and sometimes they are awesome. I have branched out a bit with my recipes; I also like Martha and Real Simple, and sometimes even Giada or Dave L, but I would really like to send a shout out to Rachel, crediting her for my cooking skills, and thanking her for the motivation to cook yummy meals for the fam!
